Tenderizing a steak using salt is a version of a technique called dry brining . You may have heard about brining a turkey for Thanksgiving, but these are usually done in a saltwater bath over several days. Steak, especially high-quality cuts like filet mignon, are known for being both expensive and exclusively for higher budgets. But thanks to coarse salt, the cheapest of cuts can still result in a delicious and tender piece of steak.
